Pao-Bhaji

There is another, Goan varient of 'Pao-Bhaji', which happens to be the original one. It is called 'Bhaji pao' (Pl. not the change in priority of words). For centuries Goans have eaten this as a staple dish. Most likely, Goans introduced it to Mumbaikars and was chaged to Pao Bhaji by adding a lot of butter. Definitely sweet loving Gujjus in Mumbai made this varient more popular. The difference? the Goan variety does not contain butter at all, only vegetable oil, very very little, please. Even coconut is for taste only. I do not know the stats, but Goans had proportionately low cardiac problems in pre- liberation (before 1961)days!
