Nonsense! Who told you that?! I have had an unlocked iPhone since September which I have used with GPRS enabled both in India as well as in the United States. It is still working fine.
The only way to get it locked again is to upgrade it when a new firmware is shipped out through iTunes. If you say "No" when iTunes asks you if you want to upgrade your firmware, everything works fine.
