Knowing & doing, Both are different... Cos, Ppl who understands the job won't worry about language... As they need paycheck, They'll learn to do their work... Only thing I suggest you is "Work to learn, Don't work for money"
Do something which you don't understand... Cos, its a job, if that person needs you & you are polite enough... He'll train you up...
Be cool in interviews... Don't worry if he asks why you wan't to do tis by studying that... You can ask them, why I shouldn't...? Instead of getting tensed of that question...
